Ingredients
  1. 1/2 cup quinoa
  2. 1/2 cup yellow moong dal
  3. 1/2 cup green moong dal
  4. 1 small onion (chopped)
  5. 1 small tomato (chopped)
  6. 1 green chili (slit)
  7. 1–2 garlic cloves (chopped)
  8. 1/2 tsp cumin seeds
  9. 1/2 tsp turmeric powder
  10. 1/2 tsp coriander powder
  11. 1–2 tbsp ghee or oil
  12. Salt to taste
  13. Fresh coriander leaves for garnish
Instruction
  1. Rinse and soak: Wash quinoa and moong dal thoroughly. Soak for 15–20 minutes, then drain.
  2. Pressure cook quinoa and dal: Add quinoa, moong dal, salt, turmeric, and 2.5–3 cups water to a pressure cooker.
  3. Cook for 2–3 whistles (or until both are soft and mushy). Set aside.
  4. Prepare tempering: Heat ghee or oil in a pressure cooker or heavy pot.
  5. Add cumin seeds, let them splutter.
  6. Add onion, ginger, garlic, and green chili. Sauté until golden.
  7. Add chopped tomato, carrot, beans, and peas.
  8. Stir in coriander powder and cook until veggies soften.
  9. Add the cooked quinoa-dal mixture into the pan with the vegetables and tempering.
  10. Mix well and simmer for 2–3 minutes. Adjust consistency with hot water if needed
  11. Garnish with fresh coriander and a drizzle of ghee.
