Sooji Halwa is a traditional Indian dessert made with roasted semolina, ghee, sugar, and cardamom. Soft, aromatic, and comforting.

Ingredients
  1. 1 cup sooji (semolina/rava)
  2. 1/2 cup ghee
  3. 1 cup sugar
  4. 3 cups water
  5. 1/4 tsp cardamom powder
  6. 10–12 cashews
  7. 10–12 raisins
  8. Pinch of saffron (optional)
Instructions

Roasting Semolina

  1. Heat ghee in a pan and add cashews and raisins. Fry until golden.
  2. Remove and add semolina (sooji) to the same pan.
  3. Roast on low flame until aromatic and light golden.

Making Halwa

  1. In another pan, boil water and sugar together.
  2. Add cardamom powder and saffron.
  3. Slowly pour boiling water into roasted sooji while stirring.
  4. Mix continuously to avoid lumps.
  5. Cook until halwa thickens and leaves the pan.

Final Touch

  1. Add fried cashews and raisins.
  2. Mix well and serve hot.
