Ingredients
1 cup couscous
1 cup boiling water (or vegetable broth for extra flavor)
2 tbsp fresh cilantro, chopped
1 tbsp olive oil
1 cup enchilada sauce (store-bought or homemade)
1/2 tsp smoked paprika
Salt & pepper to taste
1/2 tsp cumin powder
1 tbsp olive oil
1 red bell pepper, thinly sliced
1 cup cooked black beans (or canned, rinsed & drained)
Instructions
Cook couscous – In a bowl, add couscous and boiling water (or broth). Cover with a lid or plate and let sit for 5 minutes. Fluff with a fork.
Prepare veggies – Heat olive oil in a skillet. Sauté red bell pepper until slightly softened. Add cumin, smoked paprika, salt, and pepper.
Add beans – Stir in black beans. Cook for 2–3 minutes until warmed through.
Combine with couscous – Add the sautéed veggies and beans to the couscous. Mix gently.
Top with enchilada sauce – Pour enchilada sauce over the couscous mixture and stir lightly to coat
