Couscous is a North African staple made from tiny steamed balls of semolina flour. Although it is often prepared and served like a grain, couscous is actually a type of pasta. Light, versatile, and delicious, it provides the perfect blank canvas for fresh vegetables, herbs, spices, and other flavorful ingredients.

Ingredients
2 cups of pearl couscous
1 cup of cherry tomatoes, cut in half
1 cup of feta
A handful of Kalamata olives
2 1/4 cups of water
A few slices of onion
Instructions
Take some olive oil in a non-stick pan.
Add tofu cut into small square pieces.
Add some onion powder, garlic powder, and paprika, and pan-fry until crispy.
To start making couscous, bring the cooking liquid, preferably a flavorful chicken or vegetable broth, to a boil in a medium pot. Add a drizzle of olive oil, a pat of butter, and a little salt.
Next, add the couscous.
Cook the couscous on a low flame for 10 minutes.
Add cherry tomatoes, Kalamata olives, pan-fried tofu, and some feta to the couscous and mix well.
