Ingredients
  1. 5 Whole Avocados
  2. 2 Tomatoes
  3. 2 Onions
  4. 2 Red & 2 Yellow Bell Peppers
  5. Cooked Rice (1 pot)
  6. Sour Cream
  7. Mexican 4 Cheese Blend
  8. Mild Salsa
  9. Pinto Beans (1 can)
  10. Iceberg Lettuce
Instruction

Roasting Peppers and Onions

  1. Preheat oven to 400°F (200°C).
  2. Slice peppers and onions evenly.
  3. Toss with oil and fajita seasoning.
  4. Roast for 20 minutes, toss, then roast another 10 minutes.

Guacamole Mix

  1. Combine mashed avocados, onions, tomatoes, lime juice, salt, and salsa.
  2. Mix until smooth and creamy.

Rice

  1. Cook 2 cups rice with 3 cups water in rice cooker.

Final Assembly

  1. Add rice, beans, guacamole, roasted veggies, lettuce, sour cream, and cheese to a bowl.
